To make potato mix for poori, you will need the following ingredients:
- 2 medium-sized potatoes, boiled and mashed
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- 2-3 curry leaves
Instructions:
- Heat oil in a pan over medium heat.
- Add the mustard seeds and cumin seeds. Once they start to splutter, add curry leaves.
- Add the mashed potatoes to the pan and stir to combine.
- Add turmeric powder, red chili powder, garam masala powder, and salt to the pan. Mix well.
- Cook the potato mixture for a few minutes, until the spices are well incorporated and the potatoes are heated through.
- Remove the pan from heat and let the potato mix cool down.
- Once the mixture is cooled, use it as a filling for the poori dough and follow the instructions for rolling and frying the poori.
- Serve the poori hot with your favorite chutney or sauce.
