How to make South Indian dish poori

To make South Indian poori, you will need the following ingredients:

  • 2 cups of wheat flour
  • 1/4 tsp salt
  • 1/4 tsp ajwain seeds
  • Water as needed
  • Oil for deep frying

Instructions:

  1. In a large mixing bowl, add the wheat flour, salt, and ajwain seeds. Mix well.
  2. Slowly add water to the flour mixture and knead it into a soft dough. Cover the dough and let it rest for about 20 minutes.
  3. Once the dough has rested, divide it into small lemon-sized balls.
  4. Roll out each ball into a small circle, around 3-4 inches in diameter.
  5. Heat oil in a deep frying pan over medium-high heat.
  6. Once the oil is hot, gently slide in the poori and press it down with a slotted spoon.
  7. Fry the poori until it puffs up and turns golden brown.
  8. Remove the poori from the oil and place it on a paper towel to drain excess oil.
  9. Serve the poori hot with your favorite South Indian curry or chutney.

To make potato mix for poori, you will need the following ingredients:

  • 2 medium-sized potatoes, boiled and mashed
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/4 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil
  • 2-3 curry leaves

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add the mustard seeds and cumin seeds. Once they start to splutter, add curry leaves.
  3. Add the mashed potatoes to the pan and stir to combine.
  4. Add turmeric powder, red chili powder, garam masala powder, and salt to the pan. Mix well.
  5. Cook the potato mixture for a few minutes, until the spices are well incorporated and the potatoes are heated through.
  6. Remove the pan from heat and let the potato mix cool down.
  7. Once the mixture is cooled, use it as a filling for the poori dough and follow the instructions for rolling and frying the poori.
  8. Serve the poori hot with your favorite chutney or sauce.
