A Reverie

Goa

One of Goa’s most beloved restaurants; A Reverie has made major strides in proving that it's not the west alone who have lead the global food revolution. Conceived as the love child of Aakritee & Virendra Sinh; the husband and wife team tease out the best from local ingredients and food culture by reworking ideas using modern techniques whilst respecting traditional methods. Extraordinary yet down-to- earth cooking is what you will see and taste at A Reverie. The team isn’t afraid to look further afield for flavours, as its spectacular herb, spice and ingredients garden attests. It’s indeed game- changing cooking from this country’s hottest talent. A Reverie’s strengths lie in its use of an astonishing array of ingredients from around the globe as well as many that are plucked straight from the restaurant's own garden; blended with western and far eastern cooking techniques, the result is simplicity and purity of flavour, with cutting-edge wizardry and an international eclectic cuisine. The cooking style is contemporary but relatively simple: delicately constructed plates of perfectly cooked ingredients with little embellishment.

At an early age, Aakritee & Virendra, both turned their back on an impending - and no doubt extremely successful - career with the Taj Group. There’s no question they had the ability, but when entertaining friends they discovered a connection and aptitude for food and restauranteering that simply couldn’t be ignored. Chatty, warm and utterly unassuming Virendra looks after the front of the house while being the official “taster”...now that’s one hell of a job! The couple worked side-by- side in planning and executing every single detail, a journey that has culminated into a straight-forward, friendly and knowledgeable service, mirroring the simplicity of much of the restaurant’s cooking.

The food at A Reverie makes the surreal surroundings blur out of focus: a feat which only the best restaurants can manage. When nothing else is left to entertain and distract, you can only concentrate on what’s on your plate, which happens to be some of the very best food in Goa.
